You'll be surprised how easy it is to make a lemon cake where every bite is a burst of bright flavor!
This delicious cake sits right in the sweet spot between a rich lemon butter cake and a classic pound cake. It features a tender, moist crumb, a bright citrus flavor, and a sweet lemon glaze enriched with fresh zest.
You don't even need a stand mixer to make itโa simple wire whisk and rubber spatula work perfectly. If you prefer using an electric mixer, just mix on low speed once the dry ingredients are added to prevent overworking the gluten, ensuring a super soft, melt-in-your-mouth texture.

๐ก
Prep Your Lemons: Since this recipe relies heavily on zest for flavor, be sure to wash your lemons thoroughly with warm water and a little baking soda or fruit wash to remove any wax or pesticides. Always zest your lemons before you cut and juice themโit is much harder to grate the peel once the lemon has been squeezed!
Room Temperature Ingredients: For the smoothest batter, make sure your butter, eggs, and milk are at room temperature before you start. To easily cream the butter, it needs to be soft enough that your finger will leave a dent in it when you press it, and it isn't oily.
Pan Selection: A 20 cm (8") springform pan or deep round cake pan (at least 6 cm / 2.36" deep) works best. You can also use a 25.5 x 13.5 x 6 cm (10" x 5.5" x 2.5") loaf pan to get a Classic Lemon Loaf Cake.

Storage: Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 6 days. Bring back to room temperature before serving for the softest texture.
Refrigeration: This cake benefits from sitting in the refrigerator overnight, as the lemon flavors infuse fully into the crumb.
Having fun with the glaze. Watch on YouTube.

A rich lemon butter/pound cake with a super soft crumb. Easy to make and uses simple ingredients. Can be made by hand.
1.
Preheat your oven to 180ยฐC/356 ยฐF (160ยฐC/350ยฐF fan). Butter a 20 x 6 cm (8" x 2.36") round pan and line the bottom with parchment paper. See note (1) for using a loaf pan.
2.
In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
3.
In a small bowl, rub the lemon zest into the granulated sugar using a fork or your fingertips until fragrant.
4.
In a large mixing bowl (or stand mixer fitted with the paddle attachment), beat the softened butter on medium speed until creamy (about 1 minute). Add the lemon-infused sugar and beat until light and fluffy, about 4โ5 minutes. Stir in the vegetable oil until well incorporated.
5.
Add the eggs one at a time, beating well after each addition and scraping down the sides of the bowl.
6.
Stir in the lemon juice and the optional rum or vanilla. (Do not worry it the batter curdles at this point, it will smooth out when you add the flour.)
7.
Fold in the sifted flour mixture by hand (or mix on the lowest speed) just until the flour disappears.
๐ก Do not overmix at this stage, or the cake may become tough.
8.
Add in the milk and stir just until combined.
9.
Pour the batter into the prepared pan. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake cool in the pan for 10 minutes, then gently run a knife around the edge and invert it onto a wire rack.
10.
Cover with glaze while the cake is still warm. Allow to cool completely before slicing.
