Soft Yogurt and Honey Buns (with Mixed Seeds)

Looking for the perfect balance between healthy and indulgent? These Yogurt and Honey Buns are the answer. By using a combination of warm milk and yogurt, these yeast rolls achieve an incredibly soft, pillowy texture that stays fresh longer. Sweetened naturally with honey and studded with a crunchy mix of flax and sunflower seeds, they make for an ideal lightly sweet breakfast roll or a wholesome side for dinner.


[Makes 18 small buns.]

Ingredients:

  • 800 g all-purpose flour

  • 1 tbsp instant dry yeast

  • 3/4 tsp salt

  • About 1/3 cup seeds (flax seeds, sunflowers seeds, etc.)

  • 250 ml milk slightly warm

  • 250 ml yogurt slightly warm

  • 21 g honey

  • 4 tbsp vegetable oil


Method:

  • In the bowl of your stand-mixer, knead all the ingredients for about 8 minutes.

  • Transfer into and oiled bowl, cover, and proof in a warm place until doubled.

  • Knead the dough a little and divide it into 18 equal pieces.

  • Form the pieces of dough into balls and place them on a baking sheet lined with parchment; cover and let rise until doubled.

  • Bake at 200 °C (or 180 °C fan) for 12–15 minutes then place on a wire rack to cool.
