If you are looking for a cake that bridges the gap between a comforting breakfast muffin and an elegant tea-time dessert, this Apple Walnut Cake is it. This is one of those reliable, "back-pocket" recipes that fills your kitchen with the incredible aroma of baking apples, cinnamon, and vanilla.
Unlike dry sponge cakes, this recipe relies on vegetable oil and a massive amount of fruit—4 full cups of chopped apples—to ensure the texture remains soft, dense, and incredibly moist.
The method is refreshingly simple. There is no need for a stand mixer or creaming butter; it is essentially a "mix and bake" method. The batter is thick and rich, spiced with warming cinnamon and a splash of optional rum for a depth of flavor that pairs perfectly with the sweet apples.
Key Ingredients & Texture
Fresh Apples: They soften as they bake, creating pockets of jammy sweetness throughout the crumb.
Walnuts: A full cup of coarsely chopped walnuts adds a necessary crunch and earthy flavor to balance the sugar.
The Spice Blend: A combination of cinnamon, vanilla extract, and a pinch of salt highlights the natural flavors of the fruit.
You can bake this cake in a rectangular tin for easy slicing or in a round pan for a centerpiece; and it is best served simple: cooled and dusted with a light snowfall of icing sugar.
