290 g all-purpose flour
35 g unsweetened cocoa powder
1.5 tsp baking powder
1/3 tsp baking soda
1/3 tsp salt
200 g granulated white sugar
570 g mashed bananas
3 large eggs at room temperature, beaten
170 g unsalted butter, melted and cooled
1 tsp vanilla extract
1/2 tsp rum (or 1/2 tsp extra vanilla extract)
85 g walnuts, chopped
Preheat oven to 170 °C (150 °C fan); butter a 22 cm round baking pan and line it with parchment.
Into a bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.
In another bowl, mix together the bananas, eggs, butter, vanilla, rum, and walnuts.
Add the wet ingredients to the dry, and mix just until combined.
Bake for about 55 mins until a toothpick inserted into the center comes out clean.
Let the cake stand for 10 mins, then remove from the pan and place on a wire rack to cool.
