CHOCOLATE BANANA CAKE

  • 290 g all-purpose flour

  • 35 g unsweetened cocoa powder

  • 1.5 tsp baking powder

  • 1/3 tsp baking soda

  • 1/3 tsp salt

  • 200 g granulated white sugar

  • 570 g mashed bananas

  • 3 large eggs at room temperature, beaten

  • 170 g unsalted butter, melted and cooled

  • 1 tsp vanilla extract

  • 1/2 tsp rum (or 1/2 tsp extra vanilla extract)

  • 85 g walnuts, chopped


  • Preheat oven to 170 °C (150 °C fan); butter a 22 cm round baking pan and line it with parchment.

  • Into a bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.

  • In another bowl, mix together the bananas, eggs, butter, vanilla, rum, and walnuts.

  • Add the wet ingredients to the dry, and mix just until combined.

  • Bake for about 55 mins until a toothpick inserted into the center comes out clean.

  • Let the cake stand for 10 mins, then remove from the pan and place on a wire rack to cool.
